Mild Fiesta Salsa

Featuring Ball® Simple Creations® Mild Fiesta Salsa Mix
Makes about 4 (16 oz) pints or 8 (8 oz) half pints
Supplies You Will Need:
  • Boiling water canner with rack
  • Ladle
  • Ball® Utensil Set
  • 4 (16 oz) pint or 8 (8 oz) half pint Ball® Glass Preserving Jars with Lids and Bands
Ingredients You Will Need:
  • 5 14.5-oz cans petite diced tomatoes
    OR
  • 4 lb fresh tomatoes (about 12 medium) to yield 9 cups finely diced
  • 1 1.3-oz pkg Ball® Simple Creations® Mild Fiesta Salsa Mix


Step 1, Getting Started:
Read all instructions before starting. Assemble all supplies and measure all ingredients.

Step 2, To Prepare Mild Fiesta Salsa:
1.) PREPARE boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
2.) COMBINE tomatoes and contents of package in a medium saucepan. Heat to a boil. Reduce heat and simmer 5 minutes.
3.) LADLE hot salsa into hot jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rim. Center hot lid on hot jar. Apply band and adjust until fit is fingertip tight.
4.) PROCESS in a boiling water canner for 35 minutes, adjusting for altitude*. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.Salsa


QUICK TIP

To peel tomatoes, place them in a pot of boiling water for 30 to 60 seconds or until the skins start to crack. Immediately dip in cold water. The skins will slip off easily.

*Increase processing time 5 minutes for 1,001 to 3,000 ft; 10 minutes for 3,001 to 6,000 ft; 15 minutes for 6,001 to 8,000 ft; 20 minutes for 8,001 to 10,000 ft.
