Supplies You Will Need:
- Large skillet
- Mixing bowl
- Baking dish
Ingredients You Will Need:
- 1 lb sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 1-1/2 cups prepared salsa made from Ball® Mild Fiesta Salsa Mix
- 1-1/2 cups small curd cottage cheese
- 2 cups shredded Cheddar cheese
- 1 cup shredded Mozzarella, Colby, Provolone or Swiss cheese (you choose)
- Salt and pepper, to taste

Step 1, Getting Started:
Read all instructions before starting. Assemble all supplies and measure all ingredients.
Step 2, To Prepare Sassy Breakfast Casserole:
1.) PREHEAT oven to 350°F.
2.) COOK bacon and onion in a large skillet until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture.
3.) TRANSFER mixture to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered,
at 350°F for 35 to 40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
