Here is a one pan meal that can be done in less than an hour!
Home made Chicken and Dumplings is a favorite all-around comfort food. This easy recipe uses frozen vegetables, chicken broth and pre-cooked chicken or turkey. Try cooking the meat a day or two ahead, so all you have to do is add to the soup. If you've never made dumplings before, just keep in mind that they are easier to make than you think! Just mix ingredients and spoon into boiling soup. Turn heat to simmer, and cook, covered, for 10 minutes (Don't Peek!). Uncover and cook 10 minutes more, and you're done!!

Tres Leches Cake - Chef Eddie's Bonus Recipe
Pastel de Tres Leches, or Three Milks Cake has been a Latin favorite for many years. It is sweet, moist and easy to make. The three milks used in this recipe are sweetened condensed milk, heavy cream and regular condensed milk. They are mixed together and poured over the warm cake. A touch of rum is added to give it a kick (optional). For variety, try using dulce de leche or coconut milk in place of the sweetened condensed milk in this recipe.
