| From Russia With Love, Part 1* Cooking with Russian Roots by Marcy Goldman
Like many second and third generation (and far more!) generation Canadians, my roots come from Eastern Europe: from Russia, to be exact. read more . . .
Recipes:
Russian Cabbage Borsht
If you were doing well, in turn of the century Russia, it is possible; you had meat to give this soup some more oomph. Or, without the meat, this homey cabbage soup is pareve, or vegetarian and goes with any meal. Either way, it is staying stuff. When not meat-based, feel free to offer with a good thick dollop of sour cream. Da? Yes!
Sweet and Sour Red Beet Salad
Cooked beats, touch of vinegar and sugar makes this classic a perky side.
Chicken Kiev
Garlic and butter filled chicken breast, deep fried to perfection yields bundles of goodness. A sharp knife to the center of one of these packets should result in a spray of garlic butter and herbs. This is good with double-fried shoestring French fries.
* Part 2 of From Russian With Love will appear in a near-future column of Kosher Cuisine. It will offer the sweet side of Russian Cuisine. So stay tuned!
Cornbread - The Historic Comfort Food
A perfect accompaniment to winter soups and stews, the delicious and versatile comfort food known as cornbread has long been a part of our great American heritage. read more . . .
Recipes:
Southern Cornbread is made with white cornmeal, and is unsweetened. The ¼ cup of oil in the recipe can be replaced with bacon drippings for additional flavor. The baking pan should be oiled and preheated in the oven before the batter is poured in, creating a crispy crust. – A cast iron skillet works best in this recipe.
Golden Cornbread is made with yellow cornmeal, and a hint of sweetness for the northerner’s taste buds.
Hush Puppies – a great adaptation of the Johnnycake, these are crispy little nuggets seasoned with onions and deep-fried.
